This is my second banana bread recipe on the blog! Yes, I love banana bread a LOT!
I could eat it for breakfast, as a snack or as a dessert. You can also add some peanut butter on top to make it extra fancy.

Vegan Banana Blueberry Bread
My favourite banana bread recipe! Super easy & quick to make!

Ingredients
3 tbsp ground flax seeds
6 tbsp water
120 g buckwheat flour
130 g oat flour
3 very ripe bananas
120 g juicy stoned dates
1 tbsp baking powder
1 tsp vanilla
3 tbsp apple sauce
1 tsp apple cider vinegar
2 tbsp heaped almond butter*
Add-ins:
about 40 g chopped walnuts*
about 100 g blueberries*
optional: slivered almonds
Instructions
Soak your flax seeds in the water for about 10 minutes. Preheat your oven to 180 °C. Line a bread tin with baking paper.
In the meantime mix your dry ingredients apart from the blueberries and walnuts in a big bowl. Add your dates, bananas, vanilla, almond butter, apple cider vinegar and apple sauce in a food processor or strong blender and mix well. Add this mixture to your dry ingredients, add the soaked flax seeds (including the water) as well and mix everything with a spoon. Don’t over mix it. Add your blueberries and chopped walnuts as well. Spoon your batter in the lined bread tin and add more blueberries on top. You can also sprinkle some slivered almonds on top as well. Bake your banana bread for about 44-55 minutes until it turns nice and golden brown. Insert a tooth pick in the middle to check whether it is ready.

*peanut or any other nut butter could work
*you can use any other kind of nuts
