Chocolate + bananas + peanut butter = Heaven? YES!
100g *teff flour
110g rice flour
2 tsp baking powder
1 tsp baking soda
70 g apple sauce
2–3 tbsp cashew butter
2 tbsp natural peanut butter
100 g soft dates
2 tsp vanilla
3 very ripe bananas
35 g cacao powder
15 g carob powder*
70 ml plant-based milk
about 100 g soy yogurt
80 g chocolate chips + more on top
Preheat your oven to 180° C (Conventional heating). Line your loaf pan with some parchment paper.
Mix your dry ingredients, 2 kinds of flour, baking powder, baking soda and cacao- and carob powder in a big bowl.
Put your wet ingredients apart from the chocolate chips in a food processor or strong blender and mix it smooth. Add this mixture to your dry ingredients. Whisk everything smooth but don’t over-mix it! Add about 80 g chocolate chips or just chopped dark chocolate.
Spoon your batter into your lined baking tin and add more chocolate chips on top. Bake for about 35-40 minutes. Don’t bake it too long, you don’t want a dry cake.
Best served warm with some smooth or if you prefer, with crunchy peanut butter!
*you can also use any other kind of flour
*I definitely recommend using carob powder but if you don’t have any, then just use more cacao powder
